(I can't be the first to have thought of this.)
Get a plastic sleeve and a dry erase marker. Put the QRC in the sleeve and write your attack, defense and boost values on the sleeve and leave the QRC untouched. Rub the numbers off with your fingertip and rewrite as you swap out abilities. (I also record initiative bonuses on the cards for simplicity's sake.)
(The trick also works great in Untold:Battle to track damage on the minions!)

Admittedly, though, I'm slow to post about it - but I do intend to write up a "Care and Feeding of Untold Cards" article for the site which includes this little tidbit (amongst others). Unless you want to beat me to it, of course!
EDIT - I'll give credit where credit is due, by the way... I hadn't at all thought about using it to keep track of Untold Battle damage. That's an excellent idea!
